Syrian shawarma developed its own distinct identity: deeply spiced with seven-spice, sumac, and cardamom, served with house-made garlic sauce, pickled turnips, and a drizzle of pomegranate molasses. Lebanese shawarma leaned toward toum and a brighter spice profile. Turkish döner went its own way entirely.
